Day 15- official

What an utterly non-productive, lazy lazy day. I’m pretty sure I didn’t get dressed until about 2pm. I’m done with school so I’m feeling a little adrift; I started planning a crochet project to work on while I’m on vacation today (because my best friend and I are really exciting people and we pretty much just read and watch TV when we get together). I got some lovely yarn a while back and it’s been languishing all semester, waiting, yearning (yarning?) to be made into something beautiful.

Poor neglected yarn stash. It’s so sad. I’m going to start working on this tomorrow. The yarn is called Stylecraft DK  and it’s really soft, comes in amazing colors, and it’s washable, which is a good thing in a house with children and dogs.

Lest you fear that this is turning into some craft blog, I’ll tell you about my day.

Breakfast: Turkey, Kale, Sweet Potato patties with cantaloupe and strawberries

Lunch: leftover Beef Stew that I made for my husbands’ lunches- sorry, honey!

Dinner: OMG so delicious Pulled Pork with the BBQ sauce from It Starts With Food– honestly, it was amazing sauce and my whole family would have probably put it into a glass and guzzled it as a beverage if they were allowed. Plus sauteed spaghetti squash and onions with a little marinara, and a slice of cantaloupe.

Feeling: just fine, smooth sailing right now. I feel like my Sugar Dragon is hibernating pretty soundly so far. I’ve been to the bar once and I’m going again tonight, and I won’t drink; I don’t need to! Although, as I am a woman of child-bearing age, when I tell people I’m not drinking, their eyes automatically go to my belly and I get a lot of questioning looks and raised eyebrows. (For the record, folks, that’s my pooch, not a baby bump, mmmmkay?) There is an unopened package of Oreos that I haven’t even glanced at since I bought it for the family. I’m feeling pretty good about that!

 

Whoops- the days got away from me!

Sorry, guys. Once the kids come home on Friday all bets are off. It was a good weekend, mostly. We had some curfew issues with the big kids and some spaciness issues with the little kid, but generally all was well. Housework on Saturday, beach on Sunday (seriously, I 5 1/2 hours all together for 1 hour at the beach but it was worth it). I took my last final yesterday- nailed it!- and now I’m ready to settle in for a summer of just being a mom. I’ve never been able to do this; I went back to work when my youngest was 9 weeks old and I’ve been working ever since. Bring on Summer, I say!

Honestly, I haven’t been logging my food for the last few days BUT I’m putting a pulled pork into the oven in about a minute so I’ll tell you all about it tonight. I’m still on the Whole 30 program, it’s Day 15 today! Halfway through! I thought of a list of things that I’ve changed in a positive way since starting:

*I’m a baker/pastry chef. I put my Kitchen-Aid mixer in the cupboard and replaced it with the food processor on my counter, because I’m not baking any more.

*I went out to the bar on Saturday night and didn’t drink! I wasn’t sure if I could do it…

*We went to the coast on Sunday and I didn’t eat any of the delicious snacks and lunch goodies that I packed for the kids. I made my own food ahead of time and wasn’t even tempted.

*I’m down 7 pounds! I know you’re not supposed to get on the scale but i couldn’t resist.

*I’ve cooked every meal for myself the whole 2 weeks instead of eating out anywhere- a big deal, because we love to eat out!

I’m pretty sure I’ve cooked every single meal but one since starting this thing. Sometimes I just DO NOT FEEL LIKE COOKING but then I do because I…have to. I’m feeling pretty good about everything so far. I’ll post about my day later tonight. Hope you had a great weekend, lovelies!

Day 10-seriously??

Wow! I’m 1/3 of the way through this thing! 10 days ago, if you asked me if I was going to make it to 30, I would have growled at you and shoved a handful of kale into my maw. Today? That would be a resounding YES!! I am totally feeling great about the next 20 days.

Mind you, I was waaaay less productive today than I should have been. To be honest, I’ve got some sort of gnarly sinus thing going on. I won’t bore (or gross you out) with details, but I’m feeling pretty icky today, at least from the neck up. I broke down and took a couple of Tylenol this afternoon because my sinus headache was so dreadful.

But! I made some veggie “pancakes” and plantain tostadas to throw in the fridge for quick breakfast/lunch building. I also baked a couple of spaghetti squashes and made a big batch of Spaghetti Bolognese, so I’m good for lunch tomorrow at least. Lunch tends to be a meal where I want to slide back into my old sandwich-and-soup habits. Having things made ahead is such a big help to quash that feeling. I also washed every dish in the house, some of them twice. Yay.

Day 10-

Breakfast: Chicken breast cooked in ghee with seasoning, leftover mashed root veggies combined with an egg and made into a “hash” (it was really strange yet tasty), fresh cantaloupe (see my previous post on why eating the melon was a Big Deal)

Lunch: Turkey burger, veggie “pancake”, cantaloupe

Snack: handful of dried apricots (I know, I know. I was feeling faint and icky due to sinus pressure. Don’t judge me.)

Dinner: Spaghetti Squash and Bolognese sauce adapted from Practical Paleo(recipe follows)

Feeling: hideous sinus inflammation and pain nonwithstanding, I’m doing well.  A little tired today, but, again, I’m sick. Tomorrow I’d better feel better because I’ve got a shit-ton of stuff to get done. I’ll let you know how that goes (hint: it probably won’t).

Spaghetti Squash with Bolognese sauce- serves 3-4

Spag Bol

(note: I made this with coconut milk, but if you tolerate dairy, I bet heavy cream would be way better)

1 medium Spaghetti Squash

2 tablespoons cooking fat of your choice (ghee, bacon fat, or lard recommended)

1 medium onion, diced

1 medium carrot, diced

1 celery stalk, diced

1 clove garlic, smooshed and chopped finely

1/2 tsp. black pepper

2 slices bacon (if you’re doing Whole 30, make sure that bacon is compliant!)-chopped

1/2# grass-fed ground beef

1/2# ground pork

(or, 1# ground beef)

1/2 cup coconut milk, or heavy cream, depending on your restrictions

3oz. tomato paste

1 cup marinara sauce (Costco’s Kirkland Marinara is Whole 30 compliant)

Parmesan/Romano/Asiago, if you eat dairy. If you do, you’re a lucky bastard. I miss cheese a great deal.

1. Preheat oven to 350. Poke squash with knife several time. Place it on the oven rack, with a pan below to catch any drips, and roast until it is soft and squashy (about 30 minutes). Remove from oven, cut in 1/2, scoop out seeds, and then use a fork to scoop out the strands of “spaghetti” inside. Compost the rind. Set aside until sauce is ready.

2. While squash is cooking, heat cooking fat in a large saute pan or skillet over medium heat. When fat is shimmering, add onions, carrots, and celery, and cook until onion is translucent. Add garlic and black pepper and cook for a couple more minutes.

3. Add bacon and cook until it starts to brown. Add ground meat and saute until browned through.

4. Add coconut milk/cream, tomato paste, and marinara. Turn heat to low, cover, and simmer for 20 minutes. Remove from heat and serve atop previously prepared squash.

It’s a delicious, family-friendly meal. Even the littlest kid in the house eats it. And he doesn’t eat a whole lot.

I know the day’s just beginning but I had to share this!

So, as I’ve mentioned before, I’ve got Oral Allergy Syndrome. Basically it’s a syndrome (duh) where one is allergic/sensitive to foods in their raw, uncooked state. The foods that one is allergic to generally have to do with pollen allergies- most commonly: Ragweed, Grass, and Birch trees. It sucks. There are so many things I can’t eat due to the fact that my face gets puffy and my mouth and throat and eyes itch like crazy!

BUT!

Today, I ate a Cantaloupe for the first time in 7 years! And my face didn’t puff up and my eyes, throat, and mouth are not itching! Now, I don’t know if it’s because of the Whole 30, but I’m pretty danged pleased, because I love melon- I just haven’t been able to eat it. I’m not going to be eating things that I’m severely allergic to like hazelnuts to test the Whole 30 theory, but I may try some things that have given me mild reactions in the past and see what happens.

Whatever DOES happen, I’m just stoked to be able to eat melon this summer!

Day 9 and feelin’ fine!

I promised no more goofy post titles; I lied. Sorry ’bout that.

I woke up groggy today- I don’t know if it’s the diet or a new supplement I’m taking. Either way, after coffee and some food, I was rarin’ to go! I had a final in my Psych 101 class today- nailed it! And I cleaned my gross stove and got some dishes soaking… yeah, I’m a housekeeping demon.

I got a couple of packages today… I love mail! Especially when it’s not bills! Yay!!

I’ve been wanting Practical Paleo for a long time, but $40 seemed like a lot of money to pay for a cookbook. I finally found it on Amazon for much less, woot!

Obviously, the Bible for anyone embarking on a Whole 30, It Starts With Food- I feel like I’m gonna take a nice long soak in the tub with that one.

Relish: My Life in the Kitchen is a graphic-novel style memoir/illustrated cookbook- I don’t know much about the author, but I saw a review of  it on a blog…somewhere, and fell in love with her drawings.

I’ve read A Brief History of the Dead before, but it’s been a long time, and I loved it the first time, so I thought it needed revisiting. I highly recommend it- it’s hauntingly beautiful, and it made me think a lot about life, death, love- you know, nothing heavy or anything.

I took the dog for another hike today- living in Portland is great because we have a ton of urban greenspaces. We did a 2.1 miler in Woods Memorial Park- a little (35-acre) park in SW Portland, near our house. It was really beautiful, nice and quiet, and hilly enough to be challenging to an out of shape, overweight lady and a tiny dog.

Day 9 wrap-up:

Breakfast: Coffee, 3 eggs, ground beef, greens, and a sauteed sweet potato, plus local strawberries

Lunch: I kind of messed up here as my walk was later than I anticipated, so I ate a “pre-workout” snack of pecans and strawberries, realized that we weren’t going to be hiking anytime soon, and ate some leftover roasted beets/carrots and some ham. Meh.

Dinner: Mashed parsnips, sweet potatoes, and carrots; Garlic/Herb Chicken Sausages; and sauteed baby greens, plus a little bit of frozen pineapple

Snacks: see Lunch

Feeling: Pretty dang good, actually! Once I got over my morning slump, I was ready to go. I’m not craving anything in a desperate way; I couldn’t stop thinking about cupcakes and cookies today but in more of a peripheral way than usual. I feel like I’m in a good space right now.

I also realized that I skipped Day 8 in there somehow. Whoops. Today is Day 9, I promise.

Believe me when I tell you that, even without BBQ sauce, this pork was one of the best things I’ve eaten in my 39 years on this planet. I even had it with veggies and eggs for breakfast the next day. Whole 30, Part Deux

Sorry, I’m going to stop making up silly titles after today.

It’s been an ok day. I took my test and did waaay better than I was expecting. I got home and cooked lunch and then immediately crashed out for 2 hours. The sugar withdrawal is getting stronger.

Breakfast: Pulled Pork, Sauteed Broccoli and Baby Greens- what whaaaat? So good.

Lunch: Italian Turkey Sausage, Zucchini, and Mushrooms, with an apple and some almond butter.

Dinner: Pulled Pork, Sauteed Cabbage, Romaine and Tomato Salad.

Snack: Frozen Fresh Pineapple.

Feeling: A little headachy and dragging a bit. My belly feels good, but I think it’ll take a while for my body to adjust to eating 3 meals a day instead of grazing. Still not hating black coffee. I do want sugar very badly. I haven’t yelled at my children or husband yet but I expect that’s gonna happen any day now.

I should probably do a quick full-disclosure here: I have a thing called Oral Allergy Syndrome. It’s real, you can look it up. Basically what it means is that there are fruits and vegetables that I can eat cooked, but not raw. And foods that I’m allergic to in every form as well. So, there won’t be a lot of elaborate raw food salads on here, simply because I can’t eat them. It’s sad, I know.

I promise, I’ll figure out how to post pictures the way I want to, because you need to see the glory of the pulled pork.
